Stuffed Cabbage Rolls

This is one of those Eastern European classics. Different countries have different styles. This is the one Grandma made.

Ingredients

  • 10 cabbage leaves. Big ones
  • 1 lb ground beef
  • 1 c cooked rice
  • 2 c tomato sauce
  • 1 chopped onion
  • 1/2 green bell pepper. Chopped
  • 1 clove garlic minced
  • 1 tsp sugar

Preparation

  1. Submerge the leaves in boiling water for 1-2 min until limp
  2. Remove and let them dry off while you mix the filling
  3. Mix beef, onions, rice, garlic, and 1/2 c tomato sauce in a bowl
  4. Place about 1/2 c of meat mix in each cabbage leaf and fold them up like a package
  5. Line them up in a baking dish, seam side down
  6. Pre heat oven to 350
  7. Mix the sugar with the remaining tomato sauce
  8. Pour on top of the stuffed leaves
  9. Bake covered for 45 min

Spicy Cabbage

This one has an Asian flare. Added chopped chicken breast or pork, makes a great family style dish. It’s almost like moo shu pork.

Ingredients

  • 2 Tbsp dark sesame oil
  • 1/4 tsp red pepper flakes
  • 1/2 tsp sesame seeds
  • 2 tsp fresh grated ginger
    3 cloves garlic minced
  • 1/2 red bell pepper chopped
  • 4 scallions chopped
  • 1 Tbsp brown sugar
  • 1 Tbsp soy sauce
  • 1 Tbsp hoisin
  • Optional- 1 c diced chicken breast or sliced pork
  •  To make it more like moo shu pork add
  • 2 eggs beaten
  • Make a thin omelet and slice it

Preparation

  1. Heat the oil in a big skillet or Dutch oven
  2. Add pepper flakes, sesame seeds, ginger, garlic, scallions, sugar and meat if you are adding it
  3. Stir constantly about 4 -5 min
  4. Add cabbage
  5. Mix thoroughly
  6.  Cover and simmer for 10 min
  7. Add bell pepper
  8. Stir to mix it
  9. Simmer 10 more min
  10. Add soy and hoisin
  11. And sliced omelet if you are adding it
  12. Mix and serve

Diet Cabbage Soup

This is that soup that you can eat all day, every day for 7 days and lose 10 lbs.

Ingredients

  • 1 lg cabbage chopped
  • 1 green bell pepper chopped
  • 1 lg can whole peeled tomatoes
  • 6 stalks celery chopped
  • 48 oz low sodium V8 juice
    4 c water
  • 1 tsp hot sauce
  • For more flavor add 2 cubes bouillon.

Preparation

  1. Just throw it all into a big pot
  2. Bring it to a boil
  3. Reduce heat and simmer about 1 hr
