Best Brussel Sprouts Recipes

Brussel Sprouts are a delicious treat. They’ve suffered some PR troubles due to the initial odor that they release. Don’t let that deter you. It’s gone quickly. They offer a host of health benefits, including some cancer protection and a bevy of nutrients. Give any one of these recipes a try and you’ll be convinced. 

Roasted Brussel Sprouts

Ingredients

  • 1 lb small Brussel sprouts cut in halves
  • 2 Tbsp olive oil
  • 5 cloves garlic
  • 1 Tbsp balsamic vinegar
  • 1 tsp honey

Preparation

  1. Pre heat the oven to 400 degrees
  2. In a Dutch oven or oven proof skillet heat the oil
  3. Add the Brussel sprouts
  4. Stir for a few minutes to coat them with oil
  5. Add garlic cloves and sear the sprouts and the garlic
  6. When they start to brown, pop the whole thing into the oven for 20 min
  7. Check on it every 5 -7 min and give it a stir if it looks too brown on the bottom
  8. As soon as they are soft but crispy on the outside (check with a fork)
  9. Take them out and toss them with the balsamic and honey

Super easy and very tasty!

Sautéd Brussel Sprouts

Ingredients

  • 1-1 1/2 lbs Brussel sprouts
  • 1/2 lb bacon
  • 1 lg shallot minced
  • 6 cloves garlic chopped
  • 3/4 c chicken stock

Preparation

  1. Cook the bacon in a skillet
  2. When the bacon is done, remove it and place it on some paper towels to drain the excess fat
  3. Sauté the shallot, garlic and the sprouts in the bacon fat
  4. Add the stock
  5. Simmer until the stock has almost completely evaporated. About 20-30 min

Serve

Brussel Sprouts Au Gratin

More caloric but perfect for holidays like Thanksgiving 

Ingredients

  • 1 lb Brussel sprouts sliced thin
  • 3/4 c shredded Gouda
  • 1 Tbsp flour
  • 1 tsp fresh thyme minced.
  • 1 clove garlic minced
  • 1 c heavy cream
  • 1/2 c bread crumbs / crushed crackers or panko
  • 1/4 c Parmesan
  • 1-2 Tbsp olive oil

Preparation

  1. Pre heat oven to 350
  2. Toss the sprouts with Gouda, thyme, flour and garlic.
  3. Add salt and pepper
  4. Place it in an oven proof dish
  5. Pour the heavy cream over the mix
  6. Combine the bread crumbs, Parmesan and oil and pour it on top
  7. Bake for 30 min

Sweet and Salty Roasted Brussel Sprouts

This is one of our favorite side dishes!

Ingredients

  • 1/2 lb pancetta
  • 1 lb Brussel sprouts cut in half
  • 1/2 c Parmesan
  • 1-2 Tbsp balsamic vinegar
  • 1/2 c cubed butternut squash or 1 apple cored, peeled and diced

Preparation

  1. Pre heat oven to 350
  2. In a Dutch oven or oven proof skillet heat the pancetta
  3. Cook it until it’s brown and crispy not burned though
  4. Take the meat out and save it on the side
  5. Sauté the sprouts and squash/ Apple in the rendered fat until the squash/Apple starts to brown and soften. The sprouts should start to brown too
  6. Combine the cooked pancetta, Parmesan and balsamic and pour it over the top
  7. Bake for 30 min
  8. Check it to make sure that the Brussel sprouts are soft but crisp on the outside

Bacon and Bourbon Brussel Sprouts

Ingredients

  • 6-8 oz bacon
  • 1 lb Brussel sprouts
  • 3/4 c bourbon
  • 1/2 c chicken stock
  • 3 Tbsp maple syrup

Preparation

  1. Cook the bacon in a skillet
  2. When it’s ready, remove it and place it on a paper towel
  3. Sauté the Brussel sprouts in the rendered fat
  4. After they brown add the bourbon
  5. Cook and stir for about 7 min until the smell of alcohol is gone
  6. Add stock and scrape the bottom
  7. Turn the heat down to simmer until the stock has mostly evaporated. About 20 min
  8. Add maple syrup and reserved bacon
  9. Toss and heat for 5-7 more min

Serve
