We usually don’t measure ingredients or use recipes. We just go by instinct, like so many other people. When we offer recipes, though we sometimes have to do a test run at home first, just to get the measurements right. We’ve been making sautéed cabbage varieties for 2 days now and this afternoon the neighbor came a’ knocking. She said that she had to know what smelled so good. We handed her a dish of the bacon and apple cabbage and she gave us a kiss on the cheek and said that it reminded her of home. She had emigrated from Germany as a child. As she regaled us with stories, we gave her the recipe, even though we will make it for her again soon.
Ingredients
- 1 cabbage sliced thin
- 2 onions chopped
- 2 apples, cored and sliced
- 2-4 c chicken stock
- 1/2 lb bacon
- 1 Tbsp sugar
- 1/4 c shredded Gouda (optional)
Preparation
- In a large skillet or Dutch oven cook the bacon till crispy
- Remove the bacon and set it aside
- Sauté the onions in the remaining fat
- Add the cabbage and mix it thoroughly
- Cover with stock and simmer for 2 hrs
- (if you want the cabbage to be more crisp remove it sooner)
- Stir in the sugar and apples
- Simmer for 5 – 10 min
- Turn off heat
- Crumble the bacon and mix it in
- If you are adding cheese mix that in too
- This delicious treat is perfect alone but it’s also terrific with a simple pork dish
Ingredients
- 6c shredded cabbage
- 1 c shredded carrots
- 1 c mayonnaise
- 1/4 c white wine vinegar
- 1/4 c sugar
- 1 tsp celery seed
Preparation
- Mix the carrots and cabbage in a large bowl
- Mix the remaining ingredients in a smaller bowl
- Toss the cabbage and carrots with the mayo dressing
- Refrigerate for 1/2 hr
Quick, easy, and crowd pleasing
Ingredients
- 1 cabbage remove the leaves and cut them into thirds
- Olive oil
Some people do these in the microwave
- Brush the pieces with oil and microwave for about 5 min until they brown.
- Set aside until cool
- Most people use the oven
- Preheat to 350
- Brush the leaves with oil and lay them on a wire rack
- Only 1 layer at a time
- Bake for 25-35 min
- Until they start to brown
- Let cool for 20 min
- Serve with dip
