Casseroles Part 2: Simple and Kid Friendly!

Spaghetti Pie

Children love this one. The spaghetti is the crust. They find that very funny. 

Ingredients

  • 1 lb ground beef
  • 1/2 c green bell pepper, chopped
  • 1/4 c chopped onions
  • 14 oz tomato sauce
  • 7 oz spaghetti cooked as directed
  • 1 egg
  • 1/3 c Parmesan cheese
  • 1 c shredded mozzarella
  • 1/4 c garlic cream cheese

Preparation

  1. Preheat oven to 350
  2. Beat the egg and add the Parmesan
  3. Toss the spaghetti in the mixture
  4. Press the pasta mix into a greased pie plate
  5. Sauté the ground beef with the peppers and onions
  6. Once the beef is fully cooked, add the tomato sauce and break up any chunks of meat
  7. Pour that onto the pasta crust
  8. Mix the cream cheese and mozzarella
  9. Top the beef with this mixture
  10. Bake for 30 min

Cottage Pie

This is the quickie version. Use leftover mashed potatoes or make them fresh. Don’t take a short cut with a mix. Everyone loves this easy dish. 

Ingredients

  • 1 lb ground beef
  • 2 c mashed potatoes
  • 4oz cream cheese
  • 1 c shredded cheddar cheese
  • 2 cloves garlic, minced
  • 4 c mixed vegetables (fresh, steamed or frozen and thawed)
  • 1 c beef gravy

Preparation

  1. Preheat the oven 375
  2. Sauté the beef until it’s fully cooked add the garlic near the end
  3. Mix the cream cheese and 1/2 of the cheddar into the mashed potatoes
  4. Add the vegetables and gravy to the beef and mix well
  5. Pour the meat mixture into a casserole dish
  6. Spoon the mashed potatoes on top
  7. Sprinkle with the remaining cheese
  8. Bake for 20 min

Vegetable Casserole

This is a tasty side dish that kids love.

Ingredients

  • 1 20 oz package of frozen mixed vegetables, prepared as directed
  • 1 c chopped onion
  • 1 c chopped celery
  • 1 c shredded cheddar cheese
  • 1 c mayonnaise
  • 1 1/2 c crushed ritz crackers
  • 1/2 c melted butter

Preparation

  1. Combine everything except the butter and crackers in a bowl. Mix thoroughly
  2. Pour the mixture into a casserole dish
  3. Mix the cracker crumbs with the melted butter and use the mixture to top the vegetables
  4. Bake for 30 min
