Lime Basil Sorbet

This one is great between courses or with fruit. Try it flourless chocolate cake for a real treat.

Ingredients

  • 2 c fresh squeezed lime juice
  • 1 1/2 c sugar
  • 1/2 c light corn syrup
  • 3/4 c packed basil leaves
  • 2 c water
  • 1 Tbsp grated lime zest

Preparation

  1. Combine sugar, 1 c lime juice and corn syrup
  2. Over med high heat, stir constantly until sugar melts about 2 min
  3. Stir in basil and heat for 30 sec
  4. Remove from heat
  5. Add remaining lime juice, water and zest
  6. Cover and chill
  7. Strain and use ice cream maker as directed

Rose Petal Sorbet

This aromatic sorbet is perfect for a tea party or elegant luncheon. You can find food safe rose petals in specialty shops like Williams Sonoma or on line.

Ingredients

  • 2 c rose petals
  • 2 1/4 sugar
  • 4 c water
  • 2 2/3 c fresh squeezed orange juice or lime juice

Preparation

  1. Crush petals in a food processor
  2. Slowly add 1/4 c sugar
  3. Bring the water to a boil
  4. Add remaining sugar and stir until dissolved
  5. Stir in rose paste
  6. Boil without stirring for 10 min
  7. Cool for at least 1 hr and strain
  8. Add juice and freeze for about 9 hrs or use an ice cream machine

Caramel Sorbet

This is just amazingly delicious. Try this one with flourless chocolate cake too.

Ingredients

  • 1 c sugar
  • 2 c water
  • 1 tsp salt
  • 1 tsp vanilla

Preparation

  1. Use a heavy dry sauce pan to heat the sugar over med heat until it starts to melt
  2. Stir with a fork until it’s completely melted and deep gold in color
  3. Remove from heat and slowly add water
  4. Return to heat
  5. Stir constantly until the Carmel has completely dissolved
  6. Stir in vanilla and salt
  7. Chill until cold
  8. Use an ice cream machine as directed

Pina Colada Sorbet

A taste of the Caribbean

Ingredients

  • 2 1/2 c unsweetened coconut milk
  • 3/4 c sugar
  • 1/2 c pineapple juice
  • 2 Tbsp dark rum

Preparation

  1. Combine coconut milk and sugar in a heavy sauce pan
  2. Boil until sugar dissolves completely
  3. Remove from heat and set aside to cool, at least 1 hr
  4. Add pineapple juice and rum
  5. Stir well to combine
  6. Cover and chill at least 8 hrs
  7. Freeze in ice cream machine as directed

Coconut Chocolate Cherry Sorbet

Ingredients

  • 2 lbs cherries pitted( if you use canned cherries, rinse them thoroughly)
  • 1 14 oz can coconut milk
  • 1/2 c sugar
  • 1 tsp vanilla
  • 5 oz chocolate

Preparation

  1. Set aside a handful of cherries
  2. Combine remaining cherries, sugar and coconut milk
  3. Heat until sugar is dissolved and cherries are soft, about 10 min
  4. Purée until smooth and chill
  5. Chop extra cherries and chocolate into coarse bits
  6. Stir into chilled mixture
  7. Freeze in ice cream machine as directed
