Croquettes are amazingly delicious and incredibly easy to make. Grandma Scamper used to make chicken croquettes with a white gravy. We loved them. She made salmon croquettes on Christmas Eve and good Friday every year. In Madrid we discovered Serrano ham croquettes at a tapas bar.
Once we started to explore different varieties, we realized that most cultures have some type of croquette. They can be made with meat, vegetables, fish and even fruit. Try a couple of these recipes and you’ll probably come up with some new ones to enjoy. Let us know if you find one that you love.

Ingredients
- 2 c shredded roasted chicken or turkey
- 1 can cream of chicken soup
- 1/4 c milk
- 1 pkg stuffing mix or 3 c of left over stuffing
- 1 lg egg beaten
- 2 Tbsp minced onion
- 2 Tbsp finely chopped celery
- 1 c breadcrumbs
- Oil to fry
Sauce
- 1 can cream of chicken soup
- 1 c milk
Preparation
- Combine chicken, soup, milk, egg, stuffing, onion and celery
- Refrigerate for 3 hours Make balls of the mixture and roll them in breadcrumbs
- Flatten one side on the bottom so that they look like a cone.
- Fry until golden or bake on 350 for 25-30 min
Sauce
- Combine and heat until thickened
- Pour over croquettes

Ingredients
- 4 c milk
- 1/2 c flour
- 6 Tbsp butter
- 2 eggs
- 3 1/2 oz Serrano ham, chopped
- 1 bay leaf
- 1 c breadcrumbs
Preparation
- Heat milk *Do not boil
- Add bay leaf
- In a separate pot, heat butter and ham
- Add flour, stirring constantly
- until it starts to color
- Slowly add warm milk
- Stir until thick. About 20 min
- Pour into a Pyrex, baking dish that you would use for lasagna Cover with seran and chill for 24 hrs Beat the eggs Form the chilled mixture into logs Dip each log in egg, then breadcrumbs Fry until golden

Ingredients
- 1 can pink salmon
- 1 egg, beaten
- 2 Tbsp diced scallions
- 1/2 c breadcrumbs
- Oil for frying
Sauce
- 2 Tbsp butter
- 2 Tbsp flour
- 1/4 tsp salt
- 1 c milk
Preparation
- Mix salmon, egg, scallions and 1/4 c breadcrumbs
- Form balls out of the mixture
- Roll the balls in the remaining breadcrumbs
- Fry in oil until golden
To make the sauce
- Heat the butter
- Add flour and make a roux, by stirring until it’s a nutty brown
- Slowly add milk and salt, stirring constantly
- Heat on low until thickened
- Spoon over croquettes
Ingredients
- 2 c mashed potatoes
- 2 egg yolks
- 1/2 c shredded Parmesan
- 2 Tbsp chopped chives
- 1 Tbsp flour
- 2 eggs
- 1 c breadcrumbs
- Oil to fry
Preparation
Mix potatoes, yolks, Parmesan, chives and flour Beat the eggs Form logs out of the mixture Dip in egg Roll in breadcrumbs Fry until golden.
