Delicious Ice cream: Italian Style

Gelato is extra rich Italian style ice cream. In Sicily they make ice cream sandwiches with a couple scoops of gelato on a sweet brioche. That is perfection!

Lemon Gelato

Amazing with chocolate sorbet or a snifter of frozen limoncello. 

Ingredients

  • 2 c whole milk
  • Zest of 1/2 lemon
  • 5 lg egg yolks
  • 1/2 c sugar

Preparation

  1. Combine the milk and lemon zest in a sauce pan
  2. On low heat, scald the milk do not boil. For 20 min
  3. Beat the yolks
  4. Slowly beat in the sugar
  5. Strain the milk and slowly whisk into the yolks
  6. You only need to add about 1/3 then you can combine it all in the sauce pan.
  7. (Eggs react strangely, so don’t be a smarty pants and do it your way. Sugar added too quickly can make them congeal and a temperature change that’s too rapid will cook them)
  8. On low heat, stir constantly for 10 min. Use a wooden spoon
  9. As soon as it thickens enough to start to coat the spoon, it’s done.
  10. Cool completely
  11. Use the ice cream machine as directed

Cinnamon Gelato

We love this one with either chocolate or vanilla. It’s unique and tasty. Perfect after a spicy meal. If you’re feeling adventurous make one batch of cinnamon and one batch of cardamom. Just substitute the cinnamon with 1-1 1/2 tsp cardamom.  

Ingredients

  • 2 1/2 c heavy cream
  • 1/2 c sugar
  • 1 tsp vanilla extract
  • 1/4 tsp kosher salt
  • 4 cinnamon sticks
  • 6 egg yolks

Preparation

  1. Combine cream, 1/4 c sugar, vanilla, salt and cinnamon, in a sauce pan
  2. Bring to a boil
  3. Turn off the heat and let it sit
  4. Beat the yolks
  5. Slowly add 1/4 c sugar, while beating
  6. Heat cream again
  7. Remove it from the heat
  8. Slowly whisk 1/3 of the cream into the yolks
  9. Mix that back into the pan
  10. On low heat, stirring constantly with a wooden spoon for 10 min, until it thickens just enough to start to coat the spoon
  11. Chill
  12. Use an ice cream machine according to directions

Vanilla Frozen Custard

This is very similar to gelato. Once you have the basics you can add any flavor that you like. Fruit flavors are very popular. 

(For example. Use this recipe but add 3 c chopped peeled peaches and 1 c heavy cream)

One you get the hang of it you can substitute any fruit. If you get confused about the amounts, just go on line and find the right ratio. You can always direct your questions to the Scamper too. We’ll help you figure it out.

Ingredients

  • 3 c half and half
  • 1 c heavy cream
  • 8 lg egg yolks
  • 9 oz vanilla sugar
  • 2 tsp vanilla extract

Preparation

  1. Simmer the half and half for 7 min
  2. Remove from heat
  3. Beat the egg yolks
  4. Slowly beat in the sugar
  5. Whisk in 1/3 of the warm cream
  6. Whisk that back into the cream in the sauce pan
  7. Heat on low for 10 min, stirring constantly with a wooden spoon
  8. As soon as it thickens just enough to coat the back of the spoon
  9. Remove from heat
  10. Let it stand for 30 min
  11. Stir in vanilla
  12. Chill
  13. Use ice cream machine as directed

Chocolate Dairy Free Ice Cream

The recipe sounds weird but it’s really good. It’s nice and creamy. Our hostess put fudge on top. 

Ingredients

  • 1 13.5 oz can coconut milk
  • 1 avocado
  • 1/2 c cocoa powder
  • 1/2 c liquid cane sugar
  • 1 tsp vanilla extract
  • 1/2 c water

Preparation

  1. Combine all ingredients in a food processor
  2. Chill
  3. Put into an ice cream machine
  4. Follow directions
