Peaches are in season and their versatility may just surprise you. As an extra bonus, they are so flavorful that the recipes that use them are usually very simple.

Peach Preserves

You can make this and jar it to keep throughout the year. In all honesty, we just use it and share it with friends. If you present homemade preserves in an attractive way, not only will the recipient love it, they’ll ask about it next year.  We use it in recipes of all sorts and as a simple spread for toast. If you would like to jar it, this is a basic recipe that will work. If you have never jarred or canned food before, you can find simple directions on YouTube. 

Ingredients

  • 5 lbs peaches peeled and pitted
  • 3 tsp lemon juice
  • 5 c sugar

Preparation

  1. The easiest way to peel peaches is to cut a shallow x into the non-stem end.
  2. Boil them for 30 sec – 1 min
  3. Immediately place them in an ice bath. That skin will peel right off
  4. Chop the peaches and place them in a lg glass bowl
  5. Toss with sugar and lemon juice
  6. Let stand 1 hr
  7. In a lg stainless steel pot, bring the mixture to a rolling boil for 25 min stirring frequently until thickened
  8. Skim the foam off the top
  9. If you aren’t jarring it, it’s good for a week

Creamy Peach filled French Toast

This one is a Sunday morning brunch delight. If you are having guests, just add some scrambled eggs, maple bacon and mimosas and your guests will never want to leave.

Ingredients

  • 1 pkg cream cheese at room temp
  • 1 c peach preserves
  • 1/2 c sugar
  • 1 loaf challah or egg bread
  • 8 eggs
  • 1 c milk
  • 1 c heavy cream
  • 1 tsp vanilla extract
  • 1 tsp cinnamon

Preparation

  1. Slice the bread into 1 inch slices
  2. Combine the cream cheese, peach preserves and 1/4 c sugar in the food processor
  3. Spread 1/2 the slices of bread in an oven safe dish
  4. Spread the cream cheese mixture onto each slice and place the remaining slices on top to make sandwiches
  5. Mix the eggs, milk, cream, remaining sugar, vanilla and cinnamon with a mixer
  6. Pour that over the sandwiches
  7. Cover and refrigerate over night
  8. In the morning bake at 375 for one hour

Sweet and Savory Chicken Thighs

This is a family favorite. We usually serve it with long grain rice and broccoli. This is the easiest recipe ever and you’ll love it. 

Ingredients

  • 1 lb boneless skinless chicken thighs
  • 2 cloves garlic thinly sliced
  • 4 peaches halved and pitted
  • 2 Tbsp olive oil
  • 1 shallot finely chopped
  • 2 inch piece of fresh ginger peeled and grated
  • 2 tsp hot sauce (optional)
  • 2 Tbsp fresh basil sliced thin

Preparation

  1. Toss everything but the basil and bake at 400 for 25 min or until the chicken is fully cooked
  2. Sprinkle basil on top

Peach and Avocado Salsa

This is terrific with tortilla chips but our favorite way to have it is in a sliced steak soft taco in place of guacamole and tomato salsa. It’s a fresh and lighter change that compliments the steak beautifully. 

Ingredients

  • 2 peaches peeled and diced
  • 1 jalapeño seeded and minced
  • 1/2 red onion minced
  • 1/2 red bell pepper minced
  • 1/4 c fresh cilantro leaves chopped. (start with half and taste it. We love cilantro but you may not want to use it all)
  • 1 lime juiced
  • 1-2 cloves garlic minced
  • 1 ripe avocado

Preparation

  1. Mix everything but the avocado in a bowl
  2. Cover and refrigerate for at least 30 min
  3. Just before serving, dice the avocado and mix it in gently
