Lobster Bisque

This is one of our all-time favorite soups

lobster bisque

Ingredients

  • 1/2 lb lobster meat
  • 2 Tbsp minced shallots
  • 2 Tbsp chopped scallions
  • 3 cloves garlic crushed
  • 1/4 c white wine
  • 2 tsp Worcestershire
  • 1 tsp dried thyme
  • 6 Tbsp dry sherry
  • 1 tsp paprika
  • 1 c hot water
  • 1 tsp lobster base
  • 4 oz tomato paste
  • 2 bay leaves
  • 2 c heavy cream
  • 4 Tbsp butter

Preparation

  1. Sauté shallots, garlic and onions 1 min
  2. Add white wine and deglaze
  3. Add Worcestershire and thyme
  4. Stir and sauté for another min
  5. Add sherry and deglaze
  6. Add paprika, hot water and lobster base stir well to combine
  7. Stir in tomato paste and bay leaves
  8. Simmer 10 min
  9. Whisk in cream and butter and bring to a boil
  10. Add lobster meat and simmer until it’s cooked through
  11. Some people prefer a completely smooth texture. Just purée it in a food processor

Lobster Rolls

This is a summer beach side favorite in Montauk and Boston. It’s a simple lobster salad in a hot dog bun. People absolutely love it

Ingredients

  • 4 c cooked lobster meat
  • 1/2 c mayonnaise
  • 1/4 c chopped scallions
  • 1 Tbsp chopped celery
  • 1 Tbsp lemon juice
  • 1/2 tsp salt
  • 4 hot dog buns

Preparation

Thoroughly combine the ingredients and serve in hot dog buns

Lobster Toast

These delicious hors d’oeuvres are great for a party

Ingredients

  • 12 slices of white bread cut into 2 inch discs
  • 1 1/4 lb whole lobster
  • 1/4 lb pork belly cut into 1 inch pieces
  • 6 canned water chestnuts chopped
  • 3 scallions white to light green chopped
  • 2 Tbsp minced fresh ginger
  • 1 clove garlic crushed
  • 2 tsp Asian- chili bean paste
  • 1 Tbsp sake
  • 1 tsp soy sauce
  • 3/4 tsp kosher salt
  • 1 lg egg
  • 1 Tbsp corn starch
  • Peanut oil for frying
  • Soy sauce
  • Chinese mustard
  • Duck sauce for dipping

Preparation

  1. Pre heat oven to 250
  2. Place bread discs on a baking sheet and bake for 25 min, turning once
  3. Boil the lobster for several minutes until the shell turns bright red but not fully cooked
  4. Have an ice bath ready for the lobster
  5. Remove the lobster from the heat and place it in the ice bath till cool
  6. Remove the meat from the shell and chop it
  7. In a food processor, combine pork belly, water chestnuts, scallions, ginger, garlic
  8. Pulse until it’s finely chopped
  9. Add lobster, sake, chili bean paste, soy sauce, salt, egg and cornstarch
  10. Purée until it’s a paste
  11. Place a heap on each disc
  12. Fry paste side down first
  13. Flip it over once
  14. Fry until browned and crisp about 4 min total
  15. Serve with dipping sauce.
