Ingredients
- 1/2 lb lobster meat
- 2 Tbsp minced shallots
- 2 Tbsp chopped scallions
- 3 cloves garlic crushed
- 1/4 c white wine
- 2 tsp Worcestershire
- 1 tsp dried thyme
- 6 Tbsp dry sherry
- 1 tsp paprika
- 1 c hot water
- 1 tsp lobster base
- 4 oz tomato paste
- 2 bay leaves
- 2 c heavy cream
- 4 Tbsp butter
Preparation
- Sauté shallots, garlic and onions 1 min
- Add white wine and deglaze
- Add Worcestershire and thyme
- Stir and sauté for another min
- Add sherry and deglaze
- Add paprika, hot water and lobster base stir well to combine
- Stir in tomato paste and bay leaves
- Simmer 10 min
- Whisk in cream and butter and bring to a boil
- Add lobster meat and simmer until it’s cooked through
- Some people prefer a completely smooth texture. Just purée it in a food processor

- 1/2 c mayonnaise
- 1/4 c chopped scallions
- 1 Tbsp chopped celery
- 1 Tbsp lemon juice
- 1/2 tsp salt
- 4 hot dog buns

Thoroughly combine the ingredients and serve in hot dog buns

Ingredients
- 12 slices of white bread cut into 2 inch discs
- 1 1/4 lb whole lobster
- 1/4 lb pork belly cut into 1 inch pieces
- 6 canned water chestnuts chopped
- 3 scallions white to light green chopped
- 2 Tbsp minced fresh ginger
- 1 clove garlic crushed
- 2 tsp Asian- chili bean paste
- 1 Tbsp sake
- 1 tsp soy sauce
- 3/4 tsp kosher salt
- 1 lg egg
- 1 Tbsp corn starch
- Peanut oil for frying
- Soy sauce
- Chinese mustard
- Duck sauce for dipping
Preparation
- Pre heat oven to 250
- Place bread discs on a baking sheet and bake for 25 min, turning once
- Boil the lobster for several minutes until the shell turns bright red but not fully cooked
- Have an ice bath ready for the lobster
- Remove the lobster from the heat and place it in the ice bath till cool
- Remove the meat from the shell and chop it
- In a food processor, combine pork belly, water chestnuts, scallions, ginger, garlic
- Pulse until it’s finely chopped
- Add lobster, sake, chili bean paste, soy sauce, salt, egg and cornstarch
- Purée until it’s a paste
- Place a heap on each disc
- Fry paste side down first
- Flip it over once
- Fry until browned and crisp about 4 min total
- Serve with dipping sauce.
