Ingredients
- 4-5 lbs fresh peaches, peeled and thickly sliced
- 1 1/4 c sugar
- 1 c light brown sugar,
- packed
- 1 1/2 c + 2-3 Tbsp flour
- 1/2 pint raspberries
- 1/4 tsp salt
- 1 c quick cooking oatmeal
- 1/2 lb unsalted butter cut into small cubes
Preparation
- Preheat oven to 350
- Grease a baking dish
- In a large bowl, combine 1/4 c sugar, 1/2 c light brown sugar and 2 Tbsp flour
- Add peaches and mix thoroughly
- Add raspberries and mix gently
- Let that sit for 5 min then pour into baking dish
- If it’s watery add 1 Tbsp flour.
- Combine remaining flour,sugars, salt, oats and butter.
- Either mix on low or by hand until it’s a little moist and crumbly
- Sprinkle onto the peaches
- Bake for 1 hr

- 2 sheets pie crust. You can find them frozen or make your own. If they’re frozen, let them thaw
- 5 c sliced, peeled peaches
- 1 c sugar
- 1/3 c flour
- 1/4 tsp cinnamon
- 2 Tbsp butter
- 2 Tbsp sugar
Preparation
- Preheat oven to 425
- Mix sugar, flour and cinnamon
- Toss with peaches
- Press the first crust into a greased pie tin
- Pour the peach mixture into the crusted tin
- Dot the top with small pieces of butter
- Cover the peaches with the second crust
- Pinch the edges together and use a knife to make 3 slits in the crust.
- Sprinkle the remaining 2 Tbsp of sugar on the top
- Cover with foil and bake for 30 min
- Remove foil and continue to bake about 15 min
- The crust will brown a bit and the peach juice will bubble out of the slits when it’s done

- 1 c instant chicken flavored stuffing mix
- 1/2 c diced, peeled peaches
- 3 Tbsp hot water
- 1 Tbsp melted butter
- 2 bone in pork chops, 10 oz each
- 1/4 c peach preserves
- 1 Tbsp Dijon mustard
Preparation
- Preheat oven to 350
- Combine stuffing mix,peaches, water and butter
- Cut a pocket in the pork chops from the meat side almost to the bone
- Stuff with the mixture
- Close the open end with wooden toothpicks
- Place the stuffed chops into a greased baking dish
- Combine preserves and mustard
- Spread over the top of the pork chops
- Cover and bake 30 min
- Uncover and bake for 15-20 min more until juices run clear
