Raspberry Peach Crisp

This is super easy to make and everyone loves it. It’s a great summer version of apple crisp. If you don’t like raspberries, you can substitute blueberries. 

 

Ingredients

  • 4-5 lbs fresh peaches, peeled and thickly sliced
  • 1 1/4 c sugar
  • 1 c light brown sugar,
  • packed
  • 1 1/2 c + 2-3 Tbsp flour
  • 1/2 pint raspberries
  • 1/4 tsp salt
  • 1 c quick cooking oatmeal
  • 1/2 lb unsalted butter cut into small cubes

Preparation

  1. Preheat oven to 350
  2. Grease a baking dish
  3. In a large bowl, combine 1/4 c sugar, 1/2 c light brown sugar and 2 Tbsp flour
  4. Add peaches and mix thoroughly
  5. Add raspberries and mix gently
  6. Let that sit for 5 min then pour into baking dish
  7. If it’s watery add 1 Tbsp flour.
  8. Combine remaining flour,sugars, salt, oats and butter.
  9. Either mix on low or by hand until it’s a little moist and crumbly
  10. Sprinkle onto the peaches
  11. Bake for 1 hr

Peach Pie

Crust on both the top and bottom is the old fashioned style. If you would prefer less crust, you can slice the second crust into strips and criss cross them over the top. A homemade peach pie is great thing to bring to a barbecue. You will always be invited back. 

Ingredients

  • 2 sheets pie crust. You can find them frozen or make your own. If they’re frozen, let them thaw
  • 5 c sliced, peeled peaches
  • 1 c sugar
  • 1/3 c flour
  • 1/4 tsp cinnamon
  • 2 Tbsp butter
  • 2 Tbsp sugar

Preparation

  1. Preheat oven to 425
  2. Mix sugar, flour and cinnamon
  3. Toss with peaches
  4. Press the first crust into a greased pie tin
  5. Pour the peach mixture into the crusted tin
  6. Dot the top with small pieces of butter
  7. Cover the peaches with the second crust
  8. Pinch the edges together and use a knife to make 3 slits in the crust.
  9. Sprinkle the remaining 2 Tbsp of sugar on the top
  10. Cover with foil and bake for 30 min
  11. Remove foil and continue to bake about 15 min
  12. The crust will brown a bit and the peach juice will bubble out of the slits when it’s done

Peach Stuffed Pork Chops

This is a family favorite. Pork chops can be a little dry but when they are stuffed this way, they always seem perfect. 

Ingredients

  • 1 c instant chicken flavored stuffing mix
  • 1/2 c diced, peeled peaches
  • 3 Tbsp hot water
  • 1 Tbsp melted butter
  • 2 bone in pork chops, 10 oz each
  • 1/4 c peach preserves
  • 1 Tbsp Dijon mustard

Preparation

  1. Preheat oven to 350
  2. Combine stuffing mix,peaches, water and butter
  3. Cut a pocket in the pork chops from the meat side almost to the bone
  4. Stuff with the mixture
  5. Close the open end with wooden toothpicks
  6. Place the stuffed chops into a greased baking dish
  7. Combine preserves and mustard
  8. Spread over the top of the pork chops
  9. Cover and bake 30 min
  10. Uncover and bake for 15-20 min more until juices run clear
