Watermelon and Feta Salad

This fresh and tasty salad is easy to make and pairs beautifully with a simple grilled chicken breast for a light meal. You can also make an additional batch of the dressing to marinate the chicken for 1-2 hrs before grilling. 

Ingredients

  • 1/4 c fresh squeezed orange juice
  • Juice of 2 lemons
  • 1/4 c minced shallots
  • 1 Tbsp honey
  • 1/2 c olive oil
  • 1 tsp kosher salt
  • 6 c baby arugula
  • 1-2 c cubed seedless watermelon
  • 12 oz feta cheese, cubed
  • 2/3 c loosely packed fresh basil julienned

Preparation

  1. Whisk oj, lemon juice, shallots and honey
  2. Slowly add olive oil, whisking constantly
  3. Toss all remaining ingredients with the dressing mixture and serve

Layered Turkey and Cornbread Salad

This salad is visually appealing in addition to being amazingly delicious. Serve it in a glass bowl so the layers are visible. Alternatively, you can place individual salads in mason jars for a unique presentation that will delight your guests. 

Ingredients

  • 1 6oz pkg cornbread mix, prepared according to directions, cooled and crumbled
  • 1 bottle Parmesan peppercorn dressing
  • 1/2 c mayonnaise
  • 1/4 c buttermilk
  • 9 oz shredded romaine lettuce
  • 2 1/2 c chopped smoked turkey
  • 2 lg yellow bell peppers, chopped
  • 2 lg tomatoes, chopped
  • 1 red onion, diced
  • 1 c celery, diced
  • 2 c shredded Swiss cheese
  • 10 slices bacon, cooked and crumbled
  • 2 scallions, sliced thin

Preparation

  1. Mix dressing, mayonnaise and buttermilk until smooth
  2. Layer ingredients, with the exception of the scallions, in a glass bowl or individual glass serving pieces, like a large mason jar
  3. Start with the cornbread crumbs, followed by lettuce
  4. Once you’ve layered all of the ingredients, pour 1/2 of the dressing over the layers
  5. Refrigerate for at least 3 hours. Up to 24
  6. Just prior to serving, sprinkle with scallion slices
  7. Serve the remaining dressing on the side

Spinach Salad with Strawberries and Warm Goat Cheese Cakes

This is one of our favorite salads. The combination of the sweet strawberries with warm breaded goat cheese disks is amazing. Serve this one with a chilled white wine for a fabulous weekend lunch. 

Ingredients

Dressing

  • 1 c quartered fresh strawberries
  • 2 Tbsp sugar
  • 5 Tbsp white wine vinegar
  • 1/4 tsp fresh ground black pepper
  • 1/3 c olive oil
  • 1 Tbsp poppy seeds

Warm Goat Cheese Cakes

  • 1 8 oz log goat cheese
  • 1/3 c flour
  • 1 lg egg
  • 2 Tbsp milk
  • 1/2 c panko
  • 1/2 tsp kosher salt
  • 1/4 c vegetable oil
  • 5 oz baby spinach
  • 1 1/2 c sliced strawberries
  • 1 c peeled and diced cucumber
  • 1/4 c red onion, sliced thin

Preparation

Dressing

  1. Blend berries, sugar, vinegar and pepper until smooth
  2. Slowly add oil while blending
  3. Stir in poppy seeds

Warm Goat Cheese Cakes

  1. Slice the goat cheese into 1/2 inch discs
  2. Lay them on a baking sheet and freeze for 20 min
  3. Pour flour and panko into two separate shallow dishes
  4. Whisk the egg and milk together
  5. Dip the cheese discs into the flour, then the egg mixture, then the panko
  6. Fry the discs in the oil about 2 min per side until golden
  7. Mix the salad ingredients together
  8. Drizzle liberally with dressing and top with warm cheese discs.
