Sorbets and Ices

Dairy free and lighter than ice cream. Sorbets are a terrific way to maximize summer fruits. Once you read the recipes you can substitute any fruit that you like.

Lemon Sorbet

We love combining a scoop of lemon sorbet with a scoop of chocolate sorbet. Frequently, a small scoop of lemon sorbet is served between flavorful courses as a palate cleanser.

Ingredients

  • 1c sugar
  • 1c water
  • 3/4 fresh lemon juice
  • 2 Tbsp lemon zest, grated

Preparation

  1. Combine sugar and water in a sauce pan
  2. Bring to a boil
  3. Simmer 2-3 min to dissolve the sugar
  4. Let it cool to room temp
  5. Stir in lemon juice and zest
  6. Pour into ice cream machine and follow directions

Raspberry Sorbet

This one is great combined with a scoop of either lemon or chocolate 

Ingredients

  • 2 c sugar
  • 2 c water
  • 2 qt raspberries
  • 1/4 c fresh lime juice
  • 1/2 c corn syrup

Preparation

  1. In a sauce pan bring the sugar and water to a boil
  2. Reduce to simmer 2-3 min, until sugar dissolves
  3. Let it cool to room temp
  4. Purée the raspberries with the lime juice
  5. Strain through a fine sieve to remove seeds
  6. Add to sugar water
  7. Mix thoroughly
  8. Stir in corn syrup
  9. Mix thoroughly and pour into ice cream machine
  10. Follow the directions

Chocolate Sorbet

This is our absolute favorite. We prefer it to ice cream. 

Ingredients

  • 2 1/4 c water
  • 1 c sugar
  • 3/4 c unsweetened Dutch cocoa
  • Pinch of salt
  • 6 oz finely chopped semi-sweet chocolate

Preparation

  1. In a sauce pan, whisk 1 1/2 c water, sugar, cocoa and salt
  2. Boil and stir 1 min
  3. Remove from heat
  4. Stir in chocolate until melted
  5. Add remaining 3/4 c water
  6. Blend 20-30 seconds
  7. Pour into ice cream machine and proceed as directed.

Watermelon Sorbet

This one is perfection

Ingredients

  • 3/4 c sugar
  • 3/4 c water
  • 3 c chopped watermelon

Preparation

  1. Combine the sugar and water in a sauce pan
  2. Bring to a boil
  3. Reduce to simmer 2-3 min
  4. Cool to room temp
  5. Add watermelon
  6. Purée
  7. Pour into ice cream machine and follow the directions

Strawberry Basil Granita

This is a refreshing summer treat 

Ingredients

  • 2 lbs strawberries, sliced
  • 1/3 c sugar
  • 1 c water
  • 1 pinch salt
  • 1 Tbsp fresh basil leaves, sliced thin

Preparation

  1. Mix all of the ingredients together
  2. Purée until smooth
  3. Pour the mixture into a shallow pan and freeze for 45 min
  4. Scrape the sides and stir
  5. Put it back in the freezer for 3-4 hr.
  6. Scrape and stir every 45 min
  7. Serve when it’s icy   It will look like a snow cone.
