Squash Recipes You’ll Love

Squash is one of those amazing vegetables (although technically it’s a fruit) that lends itself to any number of delicious preparations. Simply prepared, it’s a nutrient laden treat. In slightly more involved dishes, squash becomes a unique twist on old favorites. There are 12 different types of squash, including pumpkin. We’re going to try to address them all.
These are the simple recipes.

Baked Spaghetti Squash

This is a terrific option for an easy meatless meal. If you would miss the meat, poach a chicken breast and serve the two together. You’ll be completely satisfied with what might ordinarily be a style of chicken that makes you feel deprived. 


  • 1 spaghetti squash, cut in half and seeded
  • 2 Tbsp butter
  • 2 Tbsp grated Parmesan


  1. Preheat the oven to 350
  2. Slice the butter and distribute evenly between the two halves. You don’t need to spread it , just toss the slices into the well of the squash
  3. Bake for 40-60 min
  4. We don’t cover it
  5. Sometimes, the tips of the edges get a little crisp. We like that.
  6. When it’s soft and easily separated from the shell, use a fork to scrape the flesh out.
  7. It will shred and resemble spaghetti
  8. Mix in 1 Tbsp of Parmesan per side.
  9. We also add salt
  10. It’s simple and really satisfying. You’ll love this one.

Roasted Butternut Squash

These little guys are cubes of goodness. They pair beautifully with oven fried chicken cutlets. So tasty. 


  • 1 butternut squash, peeled, seeded and cubed
  • 2 Tbsp olive oil
  • 2 cloves garlic minced
  • Salt and pepper

If you want to add the oven fried chicken

  • 2 eggs beaten in a shallow bowl
  • 2 chicken cutlets
  • 3/4 c seasoned bread crumbs in a shallow bowl


  1. Preheat oven to 400
  2. Toss the ingredients together
  3. Spread the seasoned squash on a baking sheet
  4. Bake for about 40 min

If you want to add the oven fried chicken


  1. Dip the chicken cutlets in the egg
  2. Then dredge them in the bread crumbs
  3. Place them on foil and bake with the squash
  4. Put them in when the squash has 20 min left so they are ready at the same time.
  5. Easy breezy and it’s a great meal that also gives the impression that you worked way harder than you did. We like to call that a win/win situation.

Sautéed Summer Squash

This simple recipe is a great side dish with barbecued chicken. 


  • 6 squash sliced
  • 1 sweet onion sliced thin
  • 3-4 Tbsp butter
  • Salt and pepper


  1. Melt the butter in a large skillet
  2. Sauté the onion until almost golden about 15 to 20 min
  3. (They are more flavorful this way but if you’re short on time translucent is fine, only you will really know)
  4. Add squash and stir to mix
  5. After about 10 min they will start to soften
  6. Turn the heat to low and cover for 25 min
