Watermelon is one of the summer’s great treats. It’s cool, refreshing and surprisingly versatile.
These recipes are simple and yet interesting. We love them all.

Watermelon Milkshakes

They are pretty and delicious. Kids love them and they add a special touch to luncheon events.

Watermelon Milkshake Recipe

Ingredients

  • 3c cubed watermelon, frozen
  • 1 c cold milk
  • 1/2 tsp vanilla extract
  • 2 Tbsp sugar

Preparation

Place all of the ingredients in a blender and blend until smooth.

We recently served these at a baby shower. It was a girl. We poured them into wine glasses and added short straws and an umbrella. The ladies loved them.

Watermelon Salad

This is always a hit when we serve it at a barbecue. Keep it chilled until you’re ready to serve it though. A cold watermelon salad compliments grilled steak or chicken beautifully.

Salad for summer

Ingredients

  • 4c cubed watermelon
  • 2 Tbsp white wine vinegar
  • 1 lime, zested and juiced
  • 1/4 c olive oil
  • 1 red onion, thinly sliced
  • 1 c crumbled feta cheese
  • 1/4 c shredded mint leaves
  • 2 c baby greens

Preparation

  1. Combine the vinegar, lime juice and zest in a bowl
  2. Whisk in the olive oil
  3. Add the sliced onion and let stand for 10 min
  4. Combine watermelon, mint, feta and greens in a large bowl
  5. Toss with dressing and serve

Watermelon Gazpacho

This version is quite mild. If you like spice add a small diced chili pepper. This cold soup pairs nicely with a salad tossed with grilled chicken for a weekend lunch. Add a crusty bread and you’re in business.

Watermelon Gazpacho for weekend lunch

Ingredients

  • 8 c finely diced watermelon
  • 1 medium cucumber, peeled and finely diced
  • 1 red bell pepper, finely diced
  • 1/4 c fresh basil, chopped
  • 1/4 c Italian parsley, chopped
  • 3 Tbsp red wine vinegar
  • 2 Tbsp minced shallot
  • 2 Tbsp olive oil
  • 3/4 tsp salt

Preparation

  1. Combine ingredients in a large bowl
  2. In 2 batches, purée 3 cups at a time in a food processor
  3. Add the purée back into the bowl
  4. Stir to combine
  5. Chill for 1 hr and serve

Watermelon Snow Cones

There’s something about snow cones that makes people smile. Instead of using a store bought syrup, try this.

Snow Cone Watermelon

Ingredients

  • 1/2 c sugar
  • 1/4 c watermelon or fruit flavored gelatin
  • 3/4 c boiling water
  • 5 c cubed watermelon

Preparation

  1. Dissolve sugar and gelatin in the boiling water in a large bowl
  2. Purée watermelon in a food processor and stir into gelatin mixture
  3. Pour the mixture into a pan and freeze over night
  4. Remove from freezer 15 min before serving
  5. Scrape the ice with a fork to serve in paper cones
